Banaras eats the way it prays — early, on the street, with total conviction. The food here isn't refined or plated; it's ancient, vegetarian, deeply local, and best met at a counter in a narrow lane with a leaf-plate in your hand. Between darshan and the ghats, the eating is half the reason the city stays with you.
The day starts with kachori-sabzi — crisp, puffed kachoris with a spiced potato curry — eaten hot in the old lanes as the city wakes. Add jalebis straight from the kadhai and a kulhad of milky chai. There's a reason "kachori galli" is a phrase; the morning street food is an institution, not a snack.
Banaras takes chaat seriously — tamatar chaat, chura matar in season, tikki. But the sweets are where it gets unusual: malaiyo, a winter-only cloud of aerated sweet milk-foam that exists almost nowhere else and vanishes with the season, and the famous thick, saffron-and-nut lassi served in a clay cup. These aren't desserts so much as reasons to visit at the right time of year.
Thandai — the cooling milk drink with nuts and spices — is woven into the city's culture, especially around Shivratri and Holi. It's part of the fabric of Banaras rather than just a beverage, and drinking it here means something it doesn't anywhere else.
Banarasi paan is a whole ritual — the betel leaf, the fillings, the theatre of it — and it closes a meal the way an aarti closes a day. Even if you don't usually, have one here at least once; it's as much a part of the city as the ghats.
Banaras feeds the pilgrimage as much as the temples do. On a GoRaahi Banaras trip we make room for the food — the dawn kachori, the seasonal sweets, the ghat-side chai — because the city isn't complete without it.
